Good morning, all!
Last night was great– Jason and I spent the evening with my bro- and sis-in-law, AND our adorable, adorable niece, Faith!
She’s too stinkin’ cute; I could kiss that face all day!
We get together every Thursday night at their place to do a Bible study, and I love it! We’re trying to decide on what our next series will be. We’re thinking to do either the Fireproof Marriage study or the Courageous Family study… We’ve already done both, and they’re great!
FOOD
We always make dinner before the study, which is great fellowship and hang-out-with-Faith-since-she’s-so-adorable time. ;) This week was our turn, and I made one of my favorite meals:
Turkey Burgers!
It’s an easy, tasty, healthy meal that is more or less a staple in our home!
What I also love about this recipe is that it’s an oven meal. Stovetop cooking sometimes turns me off to making dinner, since I don’t feel like standing around and cleaning a bunch of dishes afterward. This meal uses a bowl, spoon, and broiler pan… That’s it!

Turkey Burgers
Makes about 6-8 patties.
- 3 lb ground turkey meat (I get the 93% lean meat)
- 2 cups chopped Spinach (fresh or frozen)
- 1/3 cup yellow & red peppers, chopped
- 1/3 cup Italian bread crumbs
- salt & pepper to taste
Heat oven to broil. Combine and mix all ingredients together in a bowl, then form into patties on a broiler pan. Place on center rack and broil until cooked all the way through, about 20 minutes.
Serve with your regular burger fixin’s. I like mine open-faced on a piece of whole-grain toast with red-pepper hummus, onions and fresh spinach. Yum!
